"Scallops in Parma Ham"
Appetizer for Valentine's Day
Serving size: 2 pax.
Ingredients:
6 very thin slices of Parma ham
4 shallots, sliced thinly
½ apple, cubed
2 cups fine red wine
50 gr brown sugar
fresh thyme
fresh sage
a little beef or chicken stock
freshly ground pepper
1. Thaw the scallops in your fridge overnight, covered.
2. Pour the wine in a pan.
3. When boiling add sugar, beef stock, thyme.
4. Saute the shallots in a little olive oil, until transparent
5. Add the apple cubes.
6. Mix with the red wine syrup, discard thyme.
7. Wrap scallops in Parma ham, placing a leaf or two of sage fitting under the ham
8. Wrap them carefully, leaves to be flat.
9. Cook them in a hot pan, with a little olive oil, not more than 3 min., turning over once. (Careful not to burn the ham).
10. Drizzle the red wine sauce on the plate
11, Place three scallops on top to form a triangle,
12. Serve with a mix of fresh green leaves and a small potato salad, if you wish.
