
"Prawns with Chilli & Ginger"
Soup for Valentine's Day
Serving size: 4 pax.
Ingredients:
20 medium-size prawns
¼ cup corn-flour
¼ cup salt
Vegetable oil in a spray – you need very little for the pan
2 tsps chile oil
2 fresh chiles, no seeds, very finely chopped
1 tbsp fresh shredded ginger root
1 garlic clove no sprout, very finely shredded
2 fresh green onions, cut thinly diagonally
2 limes, zest
60 ml rice wine
Steamed basmati rice as an accompaniment
1. In a boiling pot of salted water, throw the prawns (with just the tails on) for 30 seconds ONLY

Immediately dip them in cold water, dry on kitchen paper
3. Sieve together corn-flour+2 tbsp salt

Dust the prawns, turning them over, to completely coat
4.Warm the wok or a pan, spray it with a little vegetable oil, fry the shrimps for 1 minute ONLY, drain on kitchen paper
5. Make a paste with the chile oil

Add the chile peppers, ginger, garlic and the rest of the salt

Cook for one minute in the wok, stirring.

Add the prawns and cook for another two minutes ONLY.

Add the rice wine
Serve immediately ...
1) accompanied by the steamed rice and a little soy sauce, sprinkled with green onions
2) add the lime zest (freshly shredded on top of the prawns), the very last minute, to get the fresh “kick”.
