"Clams Marinara Di Amore"
for Valentine's Day

Serving size: 2 pax.

Ingredients:

10 ml olive oil
1 minced garlic clove, no sprout left in
250 gr tomato concasse
pinch each of oregano, basil, fresh chile mince
50 gr white wine
250 gr clams, cleaned
lots of freshly chopped flat-leaf parsley
lemon wedges to squeeze on top, last minute

1. In a large pan, sauté garlic in very low heat.
2. Add tomato concasse, herbs+chile, simmer for 5 min.
3. Add wine to pan, then the clams.
4. Cover and turn heat to high for ±3 min. for clams to open (if any do not open, discard them).
5. Lift away from fire, sprinkle with parsley
6. Serve with lemon wedges and freshly boiled pasta.
