Ingredients:
60 gr. couverture chocolate, at 70% of cocoa solids min.
250 gr .thick cream
1. Break the chocolate in very small pieces
2. In a thick-bottomed pot, bring the cream to boiling point for about one minute
3. Remove from
heat
4.
Add the chocolate
5. Mix rapidly with a wooden or plastic spatula, until the chocolate is well melted and the
mixture is completely homogenized.
